It's Enchilada night!!!

I'm not ashamed to say we have mexican food every week.  I love to cook it and I love to eat it.  I want to share with you my go to recipe for beef enchiladas.  They are easy, tasty, and mexican.

 Let's get started.

Brown a pound and a half of ground beef and onion.  Drain grease.  Then add 1 can of enchilada sauce and 1 can of tomato sauce and simmer a bit.

Layer a tortilla, beef mixture and cheese and roll up enchilada style.

Arrange in a greased baking dish

Pour your left over meat mixture over the top

Bake covered for 25 minutes.
Then take the cover off and sprinkle some cheese on top and pop it back in the oven for 5 minutes

And then it looks like this...mmm

Add some chips, sour cream and black olives and say Ole!
